Food containing allergens needs to be handled with special care, as recent cases have shown that consequences can be devastating on both customers and businesses. Anyone who handles food must know what procedures to follow to keep customers safe.
There are fourteen particular food allergens that are recognised by law and employees handling food must undergo training in food allergy and be aware of the risks of allergic reactions. Food handlers must also be aware of possible food contamination: this happens when allergens unintentionally end up in food.

Regulations: This module covers food safety legislation related to allergens; including the Food Safety Act (1990; as amended), General Food Law Regulation (EC) 178/2002 & 852/2004, and Food Hygiene Regulations (2013).
